21 Day Fix & EXTREME Challenge!!!!



Hey friends!!! Are you interested in the 21 Day Fix and 21 Day Fix Extreme programs??? I will be hosting a challenge starting February 15th for these programs only!!!!!





I am super excited to see what we can accomplish in this challenge. If you choose EXTREME you will be one of the very first participants in this program since it launched February 2nd!!!  


Here is what our program together will look like...

We will work for 30 days in a private Facebook Group and support each other while we learn about health, fitness and nutrition.  The other challengers will be doing the 21 Day Fix or 21 Day Fix EXTREME as well. This means we will all be on the same eating plan and the same journey together!






Here are the three basic steps...

1. You workout each day.  This is a 7 day / week program, and there is something to get you moving each day.  We are all working and starting at the same time, so we will have the support from one another as we start the process together.  


2. We fix the nutritional aspect. This is problem #1 for most busy challengers...even harder than finding the time to work out. You will get a copy of our go-to meals and cheats, as well as our nutritional guidelines. We have a gazillion ideas to get you a back in a healthy routine again. Usually everyone in my challenge is super busy. It's just like getting your family on a schedule. As soon as you get your life on a schedule that makes sense you will start to see more success.  The challenge pack comes with a meal plan and the containers to support clean eating and proper portion sizes.  We will share recipes and struggles and help find out what is working for each other.  


3. You are active in our accountability Facebook group. This is where the magic happens. We share, hold each other accountable, check in every day, and learn from each other. We share recipes, support, failures, successes, you name it. We are there to help lift each other up for the duration of the challenge. We also take before and after pictures, and measurements. We want you to physically see the results that you have gained during the challenge!!!!

Gluten Free & Dairy Free French Toast Casserole


Hey friends!! Just wanted to share another recipe with all of you.  There is absolutely NOTHING better than a lazy Saturday or Sunday morning.  Today I will be sharing the perfect breakfast option for just that occasion.  The recipe can be made ahead of time also, so you could prep it the night before and let it sit in the fridge overnight and bake in the morning!!! That, my friends, is magical.

As most of you know we are a gluten free and mostly dairy free family.  Many members of our immediately family suffer from Celiac disease and/or gluten intolerance.  Another big chunk of our family suffers from a dairy intolerance as well.  So this recipe fits perfectly with what our family can eat.  So, when all 8 (soon to be 9) cousins are in the house together its nice to have an easy breakfast option that they can all enjoy!!!

Here is what you'll need:

1 loaf of gluten free bread.  (Home made or store bought)
6 large eggs
1 3/4 cup of almond milk
1 tsp cinnamon
1 tsp vanilla extract
1/4 tsp ground cloves
1/4 tsp ground nutmeg
1/4 tsp kosher salt
1/2 cup of coconut oil ***maybe a bit more
1 cup coconut sugar
1/2 cup slivered almonds


1.  Cube the bread and place into 2 quart baking dish...


 ***Remember to grease the dish wit coconut oil


2.  In a large bowl, whisk together the eggs, milk, cinnamon, vanilla, cloves, nutmeg and salt...


3.  Pour mixture over cubed bread...


4.  In a small saucepan, melt the coconut oil.  Whisk in the coconut sugar and heat over low until melted.  I kept the coconut oil close to add a little extra for the right consistency. You want it to be like a glaze...


5.  Add in slivered almonds and pour the mixture over the bread...


Mmmmmmmmmmmmm...


6.  Cover dish with foil and refrigerate overnight (or you can bake immediately)  Bake in 350 degree oven for 25 minutes with the foil ON!!! Remove the foil and bake an additional 20 minutes. Serve with syrup, honey. or your favorite toppings.


I wanted to try a "Paleo" version of this, but I didn't quite have time to make the bread first.  When I do that you will be the FIRST to know.  Happy baking friends.

Copycat "ARENA" Burger


There are a lot of cool places to get inspiration for food.  Sometimes you have an amazing meal out at a restaurant.  Pinterest is a place where I often find inspiration.  However, attending a college basketball game isn't the first place I would have assumed inspiration would arrive, but it did.

A few weeks back I attended the Missouri vs. Illinois basketball game.  We had great seats with some great friends.



I was starving at the game and usually at events like this you are struggling to get anything remotely healthy.  Ball games are for beer, peanuts, hot dogs and pretzels right?? Which, I am all for splurging and having fun.  But,  I wasn't really hungry for a SNACK...I wanted a MEAL!!!

There was a burger place right behind our fantastic seats so I went to check it out.  They had the most LOADED burgers I have ever seen.  They even had veggie burgers.  However, the burger that caught my eye was the Turkey Burger.  I do NOT remember the name that it was given, but I do know that all the "fixins" they had planned for the burger was right up my alley...

AVOCADO
SALSA/PICO DE GALLO
PEPPER JACK CHEESE

Yes please!!!!!

So I ordered it and I was blown away.  So, of course, I had to try and re-create it.

I would say it turned out pretty good.  Basically I mixed a recipe we had already shared and then added more toppings.  Marta had posted this Italian Zucchini Turkey Burger recipe back in the day.  I just added the topping to what she already perfected.

I made these burgers at Adie's house and we did not have the Zucchini on hand, so we made the burgers with all the same ingredients except for the zucchini.  However, I think the zucchini would have made the burgers even better!!!!!

So here are the ingredients we used...

2 lb extra lean ground turkey breast
1 tsp sea salt
1 tsp garlic powder
2 tsp onion powder
1 tsp oregano
1 tsp black pepper


For topping:

Avocados
Pepper Jack Cheese
Salsa/Pico De Gallo




Mix all burger ingredients with spices in a large bowl.


Form your burgers.  I made 9, but next time I would make them a bit bigger because they shrunk up a lot.  So 8 burgers would probably be perfect.  Make sure you spray the baking dish with coconut oil!!

Set the broiler to High (around 500) and put the burgers about 2 inches below the burners.

Cook for 7 minutes on one side, then flip your burgers and cook for 7 more minutes on the other side!


While the burgers are broiling you can make your topping.  You have two choices...

You can make more of a pico de gallo or a "guacamole".  I love the cheaters version of guacamole. All we do is cut up an avocado and mix in our favorite Italian Rose salsa to a consistency that you like!!!!


Here is the salsa mixture...



So it's your choice in how to "finish" the burger off.  If you are doing dairy throw a thin slice of pepper jack cheese on the top and add your toppings!  Boom...you are done!!!!


 Guacamole on top!!!


Now, I'm no food photographer, but I will say these photos don't do the recipe justice.  These were YUM!!! And they were gone in like 10 seconds.  The kids even gobbled them up!!!  I hope you enjoy these burgers.  Look for food inspiration all over the place.  You may just be surprised!!!!!!!!!
