Marta's Meatloaf Muffins

I have had a lot of requests to share one of my go-to recipes, which I call my meatloaf muffins.
I combined a few different recipes that I found over the years to create my favorite concoction.
I love the addition of the grated zucchini as it makes them SO juicy and delicious!

Want to try them? I think you should!
Here is what your cute self will need:

  • 2 lbs. ground turkey/bison/grass fed beef (bison is my fave!)
  • 2 eggs
  • 1 (or 2 depending on your preference) large zucchini grated
  • ½ tsp ground cumin
  • ½ tsp dried thyme
  • 2 tsp dry yellow mustard
  • 2 tsp black pepper
  • 2 tsp pepper
  • 1 tsp salt
  • 2 tbsp garlic powder
  • 1 diced onion
  • 2 diced celery stalks

Directions:

Pre-heat oven to 375 degrees and spray a muffin pan with some coconut oil cooking spray (or coat with a little olive oil)
Mix all the ingredients in one large bowl until well combined.  Roll the mixture into balls and place each one in the muffin pan.
Bake for 30 minutes or until cooked through.

Makes 12 juicy muffins.

Let me know if you make these and if you like them!

  1. Thanks so much for posting this recipe! I saw these over on Meg's blog (Whatever) and they looked so good! I am going to make these and copy Meg's idea of freezing some for when I need something quick for dinner.

  2. Thanks so much for the recipe! Is one muffin a red container?
