Paleo Banana Make-Ahead Pancakes

Back to School Blues...

I totally have these.  The long days of summer and being on whatever schedule we want are gone.  LONG GONE!! And it makes me teary eyed.

I want the smell of bug spray back...yep I said it :)

I want the late night swims back.

I want to NOT have to set an alarm.

I want my late night Breaking Bad marathons back.

I want the warmth back.  Don't get me wrong...I LOVE Fall...but this abrupt fall came WAY too fast.  I find myself wishing for a little global warming right about now. ;)

Both of my children were SO ready for school.  They were excited to start and excited to meet new friends.  They were excited to get into a school routine.  I was excited for that routine as well...and we have transitioned smoothly.

Today I want to share a few things that have helped keep us on track.

#1 Some kind of healthy BREAKFAST made ahead of time.

There is NOTHING worse than rushing around like a psycho in the mornings!!! One way to make sure this doesn't happen is by having a healthy breakfast prepared ahead of time.  In the mornings I am busy rounding up MY lunch and packing the kids.  Anyone can throw a bowl of a cereal and milk together.  I strive for better nutrition than that in the mornings if I can.  I want something protein packed that will last my children until lunch.

Two of my favorite recipes are the BREAKFAST CASSEROLE and PALEO PANCAKES!!  We will share this recipe at the bottom of this blog!!!!!

Try out one of these and you will be hooked...not only on the deliciousness, but on the easiness of your mornings!!

#2 Is to EMBRACE leftovers!!!!!

I literally don't know what I would do every day if leftovers weren't a part of my every day plan.  Whatever we have for dinner comes with me the next day.  We always a plan a healthy dinner, so this is a GREAT way to ensure that lunch is healthy...and it's less prep work.  You are just cooking MORE of what you already had planned.

#3  Have a back up plan...

One of the best things that I have done all year is to keep some Shakeology in my office at school.  Whenever a hardcore craving comes along...or if I forget my lunch or snack I have something there at all times to keep my healthy streak going.  There is nothing worse than getting stuck with crappy food as your ONLY option.  Shakeology needs only water and it's sweet enough to feel like a treat!!!

You never know when a craving will pop up.  This helps me indulge without guilt!!

Now...on to the Pancake recipe...


2 1/2 cups of Almond Flour (I use Wellebees from Amazon)
1/2 cup of Coconut Flour
1/2 cup of Coconut Sugar
1 tsp Baking Soda
1/2 tsp Celtic Sea Salt
3 ripe bananas
6 eggs
1 can of Full Fat Coconut Milk
2tsp vanilla extract
Honey, almond butter or pure maple syrup for serving!!
Spray coconut oil for lining the baking dish

I have also added chocolate chips to these...and switched the bananas for 3/4 a can of pumpkin.  Both were amazing!!!


Preheat oven to 350
Put all wet ingredients in blender and blend until smooth.
Mix all dry ingredients in a large bowl then mix in wet ingredients!!!! A hand blender works well!!

Pour into greased baking dish. And bake until 30 minutes or until toothpick comes out clear!!

Reheat in AM for kiddos and enjoy!!!!!


  1. Ugh I have the end of summer blues big time! I agree fall came TOOOOOO quick, not even cooling down just a bit but instead hot one day and freeeeeezing the next..,.sad! Anyway Thanks for the recipe I am going to make it! Probably a silly question but is regular sea salt acceptable?

  4. Do you freeze or just keep in fridge? If just fridge what is average shelf life of taste/consistency? Being family of 3 we tend to make batches and freeze when we can.
